🍎 Common salt (sodium chloride) in meat and meat products — PN-A-82112
In short
The national standard for determining the common salt content of meat and meat products. The test is performed according to PN-A-82112:1973 wraz ze zmianą PN-A-82112:1973/Az1:2002 (wersja polska); Measuring ranges declared in the accreditation scopes: lowest lower limit 0.02 g/100 g (AB 552), highest upper limit 14.6 % (AB 486); at 14 of the 17 laboratories the upper limit lies between 6 and 10 %. The procedure comprises 3 steps; it is used for: Meat and meat products — scope of the standard according to the card, In the accreditation scopes also canned vegetable-and-meat and poultry products, fruit and vegetable products and — at one laboratory — a dozen or so food groups.

Overview
WHAT THIS STANDARD DESCRIBES. The scope from the PKN catalogue card, in full: "Przedmiotem normy jest oznaczanie zawartości soli kuchennej w mięsie i przetworach mięsnych" [The subject of the standard is the determination of the common salt content of meat and meat products]. An amendment, PN-A-82112:1973/Az1:2002, was issued to the standard; its card gives in the "Scope" field: "Wykreślono tekst dotyczący oznaczania zawartości soli kuchennej metodą Volharda" [The text concerning the determination of common salt content by the Volhard method has been deleted]. Which method (or methods) remained in the standard after this amendment — WE HAVE NOT ESTABLISHED: we did not have the text of the standard, and the cards do not say.
STATUS (state of the cards on 23.09.2026). The standard: publication 19-06-1973, 2 pages, withdrawn 04-09-2014, with no "Replaced by" field; it replaced PN-A-82112:1956. Amendment Az1: publication 05-11-2002, 1 page, also withdrawn 04-09-2014. Both cards: KT 93 Meat, Eggs and their Products, ICS 67.120.10. Whether another document in force stands in the PKN catalogue today for the determination of salt in meat — WE HAVE NOT ESTABLISHED. The cards of PN-ISO 1841-1:2002 "Mięso i przetwory mięsne -- Oznaczanie zawartości chlorków -- Część 1: Metoda Volharda" [Meat and meat products — Determination of chloride content — Part 1: Volhard method] (according to the "Scope" field — for a sodium chloride content of 1.0 % (m/m) or more) and PN-ISO 1841-2:2002 "… -- Część 2: Metoda potencjometryczna" [… — Part 2: Potentiometric method] (0.25 % (m/m) or more), implementing ISO 1841-1:1996 and ISO 1841-2:1996 [IDT], have the header "Withdrawn" and the withdrawal date 06-07-2018, and have no "Replaced by" field (state of the cards on 23.09.2026). In accreditation scopes they are cited by 8 laboratories in 10 entries (PN-ISO 1841-2 — 6 laboratories, PN-ISO 1841-1 — 2; reading of 23.09.2026). In the Netherlands the standard with the potentiometric method is in circulation: the NEN catalogue gives for NEN-ISO 1841-2:1996 — the Dutch implementation of ISO 1841-2:1996 "Meat and meat products - Determination of chloride content - Part 2: Potentiometric method" — the status "Current" and the type "Current standard" (reading of 23.09.2026). We did not read the status of ISO 1841-1 and ISO 1841-2 in the ISO catalogue — the iso.org page refused the download.
A STANDARD FROM 1973 WITH AN AMENDMENT FROM 2002 — THIS IS HOW LABORATORIES CITE IT. All notations of the number 82112 in the reference-document field (no digit before or after the number): 17 entries at 17 laboratories. Amendment Az1 is added by 13 of them; the prevailing form is "PN-73/A-82112+Az1:2002" (6 laboratories: AB 079, AB 381, AB 400, AB 527, AB 559, AB 624), followed by the same elements with different spacing or a slash ("PN-73/A-82112 +Az1:2002", "PN-73/A-82112/ Az1:2002", "PN-A-82112:1973 + Az1:2002", "PN-A-82112:1973 + AZ1:2002") and with a clause of the standard. Four laboratories cite the standard without amendment Az1: AB 451, AB 552, AB 343 and AB 583 (AB 585 has both notations in one entry — with Az1 and without it).
CLAUSES OF THE STANDARD IN THE SCOPES. Clause 2.2 is indicated by three laboratories (AB 377, AB 437, AB 583), clause 2.5 by one (AB 510), and one cites the standard "bez pkt. 2.1" [bez pkt. = without clause] (AB 343). What these clauses contain — WE HAVE NOT ESTABLISHED; we did not have the text of the standard and we do not connect clause 2.1 with the deleted Volhard method, because nothing in the sources says so.
THE TECHNIQUE RECORDED WITH THE STANDARD. All 17 entries concern one parameter — common salt or sodium chloride. The technique is recorded as follows: "Metoda miareczkowa (Mohra)" [titrimetric method (Mohr)] — 8 laboratories (AB 1179, AB 343, AB 377, AB 381, AB 400, AB 510, AB 527, AB 559); "Metoda miareczkowa" [titrimetric method] without a name — 8 (AB 079, AB 437, AB 451, AB 465, AB 486, AB 552, AB 583, AB 624); "Metoda miareczkowania potencjometrycznego" [potentiometric titration method] — 1 (AB 585).
WHAT THE "LABORATORIES" TAB SHOWS. The tab searches for notations BEGINNING with "PN-73/A-82112" and shows 13 laboratories in 13 entries. Four laboratories write the standard in the newer designation scheme, "PN-A-82112:1973", and the tab will not show them: AB 1179, AB 343, AB 486, AB 583. A key in the newer scheme would show only these four — that is why the scheme used by the majority remains.
AN OBJECT OF TESTING WIDER THAN ON THE CARD. The card speaks of meat and meat products, and 11 laboratories write the object exactly so; three write the same object in other words (AB 079, AB 437, AB 465). Three add others: canned vegetable-and-meat, poultry and meat products (AB 451), fruit and vegetable products (AB 486), and AB 552 — a dozen or so food groups, from poultry, eggs, fish and milk to confectionery, concentrates and meals. Whether the standard covers this — WE HAVE NOT ESTABLISHED; this is a reading of the scopes.
WHAT WE DO NOT GIVE. We did not have the text of the standard — PKN makes it available for a fee (2 pages, the amendment 1 page). We do not give the course of the determination, the sample preparation, the reagents, the formula or the precision.
Method principle
According to the cards: the standard concerns the determination of the common salt content of meat and meat products, and its amendment Az1:2002 deleted the text on the Volhard method. Which method remains in the standard after the amendment — we have not established. In the accreditation scopes all laboratories determine one parameter under this standard (common salt or sodium chloride) by a titrimetric method: half of them with the addition "Mohra" [Mohr], one by potentiometric titration. WE DO NOT GIVE the course of the determination — we did not have the text of the standard.
Applications
- Meat and meat products — scope of the standard according to the card
- In the accreditation scopes also canned vegetable-and-meat and poultry products, fruit and vegetable products and — at one laboratory — a dozen or so food groups
